Program Overview

The Brewing Technician diploma program at CTS Canadian Career College spans 39 weeks, integrating distance education instruction with practical brewery experience. This credential equips students with brewing science fundamentals, fermentation management, quality control protocols, and packaging technologies essential for professional brewing operations. Delivered through 29 weeks of online learning followed by a 10-week (300-hour) industry internship, the program enables students to complete theoretical training within their communities before applying acquired knowledge in real-world brewery environments across Ontario's expanding craft brewery sector and large-scale brewing facilities.

Core Competencies

  • Brewing science & production processes - ingredient chemistry (malt, hops, yeast, water), mashing, lautering, boiling, fermentation management, cellar practices, packaging operations (kegging, canning, bottling)
  • Quality assurance & laboratory techniques - sanitation protocols, CIP systems, testing methodologies (gravity, pH, IBU, SRM), sensory evaluation, brewery hygiene standards
  • Operations management & regulatory compliance - equipment maintenance, draft systems, production planning, inventory management, record-keeping, marketing, distribution, regulatory frameworks, taxation requirements
